The Arsenal Project welcomes a new food truck to it’s Wednesday lineup. This one features a fusion of Turkish and Chinese cuisines!

Uyghur Kitchen features food from China’s Northwest province known as Xinjiang. The Uyghur (pronounced wee-geer) are Turkic people who live in Central Asia, and their food includes influences from neighboring areas of Turkey, Tibet and China.

The food truck is run by Pie Polat, who plays in a jazz-rock band called Background Orcs by night and runs the food truck by day. The menu features lamb and chicken skewers, wraps and salads. The lamb comes from Australia and is marinated for up to three days.

Polat saw the plethora of food trucks when he lived in Los Angeles. In 2013, when be moved to Boston, Polat got a job at Sweet Tomatoes’ food truck to learn the ropes, according to the announcement. His dream, however, was to start his own food truck to bring Uyghur food to the United States.

Last year he received approval from the City of Boston to start his food truck.

He can be found in Watertown every Wednesday at the Arsenal Project, 485 Arsenal St., from 11:30 a.m.2:30 p.m.

He can also be found in Boston: Sundays and Mondays at the corner of Clarendon & Boylston streets, 11:30 a.m.-2:30 p.m. and Thursdays at the corner of Belvidere Street & Huntington Avenue from 11:30 a.m.-8:30 p.m.
